Zucchini-Ribbons Salad

2 medium-sized zucchini
3 juicy, ripe medium-sized tomatoes
Zucchini-Ribbons Salad
2 Tbl walnut oil
Salt & pepper to taste
A couple of handfuls of toasted pumpkin seeds

Simply start off by using the ribbon accessory on your veggie spiralizer to cut the zucchini into long curly ribbons. Douse them with the walnut oil, salt and pepper, and mix well. Arrange the zucchini in your serving dish. Dice the tomatoes and place them in a dollop in the middle of the zucchini ribbons. Then sprinkle toasted pumpkin seeds over it all!
Super easy and surprisingly delicious! 

*Notes: Try not to substitute the walnut oil for another variety and don’t forget the pumpkin seeds! The combination of flavors makes it special!
